If your child is in a homeschool co-op, the co-op's field trip next month is being organized by one mom in the Facebook group, and seven families are chipping in for the bus rental, the entrance fees, and the lunch arrangements. This is the percentage calculation that shows up at checkout counters, on tax forms, and in every sales flyer you receive in the mail.
X is what percent of Y — the reverse question. Your child got 27 out of 32 on a test. What percentage is that? You spent 340 dollars on curriculum this year out of a 400 dollar budget. What percentage of the budget did you use? This calculation is especially useful for homeschool parents building grade reports, evaluating progress against a goal, or analyzing a survey. Your spreadsheet probably does this automatically, but when you need a quick answer, you do not want to open a spreadsheet.
Percentage change — the calculation that matters when something has gone up or down. Curriculum price increased from 89 dollars last year to 99 dollars this year — what is the percentage increase? Your grocery bill dropped from 720 a month to 640 a month after you switched stores — what is the percentage decrease? This is the calculation for understanding whether trends are as dramatic as they feel. A 20 percent grocery increase hits different than a 4 percent one, and the difference is worth knowing before you decide whether to panic.

Scaling recipes for the life you actually live
Cookbook recipes are written for imaginary families of four. Your family is not imaginary, and it is almost certainly not a family of four — it is a family of two, or six, or seven counting the cousins on a Saturday morning, or a crowd of twenty when the co-op meets at your house for the harvest party and everyone is bringing a dish. The math is simple enough to do by hand — divide the desired servings by the original servings to get a scale factor, then multiply every ingredient by that factor — but it gets cumbersome fast when a recipe has fifteen ingredients and you are trying to do it in a kitchen with one hand while stirring a pot with the other. When scaling works and when it doesn't
Linear scaling works beautifully for most everyday cooking. Chili, soups, stews, casseroles, pasta sauces, baked pastas, rice dishes, most cookies, most quick breads — these scale up or down without incident. You double the ingredients and you get double the dish.
Baked goods that depend on precise leavening ratios — souffles, certain sponge cakes, macarons, croissants — can be temperamental at extreme scales. If you are doubling a cookie recipe for a bake sale, you are fine. If you are attempting to scale a souffle from four servings to forty, do multiple batches rather than one giant one. Pan size and baking time also do not scale linearly — a double batch of brownies in a bigger pan will cook faster than you expect because more surface area is exposed, so check at two-thirds of the original time.
For most homeschool family cooking — feeding the crew, feeding the co-op, feeding a neighbor who just had a baby — linear scaling is exactly what you want. The tool handles it. You handle the oven.
